I found the perfect breakfast. I never was a breakfast girl, sometimes it was just a banana, yes I know, that is not correct but I was never a hungry girl in the morning and I am always on a rush.
This quarantine made me invent and refine a breakfast that I have been having for more than 6 months and now I’m always eager to eat it, I want the morning to come to eat this breakfast and although the rush is still present, I decided to set the alarm a little earlier just to enjoy this yummy breakfast.
The first step to do this breakfast is having homemade granola made in advance. I usually do this on the weekend on a large scale for the whole week.
The recipe that I use is:
- 2 cups of oats
- 1 cup of cashew
- 1 cup of almonds
- 1 cup of hazelnut
- 1 tablespoon of melt coconut oil
- 1 tablespoon of peanut butter
- a pinch of salt
- coconut chips
As you can see, I love dry fruits so mine is on that base. Sometimes I add banana to be more sweet and succulent, sunflower seeds, honey or you can put other dry fruits of your preference. Oh and I forgot Cinnamon, I also love cinnamon and usually that is something I put on my granola.
Goes to the oven for 20 minutes at 180ªC, don’t forget to sometimes go there and mix a little. The coconut chips you just put when is almost done, because it can burn. After cooling down it can be stored in jars of glass.
This has been my breakfast for 2 months, and I can’t be bored with it, because it’s so delicious, and yummy, healthy, and good looking.
To do this breakfast you need
- homemade granola (I put 3 tablespoons)
- Spirularin (one tea spoon is enough)
- yogurt (I use Alpro Soya in natural flavor)
- Cherries or another fruit that you like but I think that red fruits suits better, like for example strawberries, that is what I use when I don’t have cherries.
You just need to mix everything, put a little more granola on top with the cherries and Voila. I like to accompany with coffee because I’m a coffee addict.
