Last minute gifts: cookies, jam, marmalade and much more!

Hello beauties,

Either due to the pandemic, forgetfulness or even a low budget, sometimes there are situations where you have to resort to last minute gifts.

Who never forgot to buy a gift for a neighbor and suddenly he/she appears at the door on the 24th of December with a souvenir for you? Or a cousin who said would not come to dinner but at the last minute decided to come? It happens and because of that, we decided to help you find a perfect last minute gift!

Cookies!

Even better if you have a cute jar, or a normal jar with a ribbon! I will give you a recipe that I have and I can guarantee to you that you will not find a simple recipe! Oh and the result is always good!

Prep time: 15 minutes

Ingredients:

  • 1 cup (225 g) unsalted butter, cut into pieces and at room temperature
  • 1 cup (130 g) icing sugar, sifted
  • 1 larger egg, at room temperature
  • 1 tsp (5 mL) vanilla extract
  • 2 1/2 cups (375 g) all-purpose flour
  • 1/2 tsp (2.5 g) salt

Directions: using electric beaters or in a stand mixer fitted with the paddle attachment, beat the butter until smooth. Add the icing sugar and start on low speed to work it in, and then increase the speed to medium-high beating until fluffy, about 2 minutes. Beat in the egg and vanilla. Add the flour and salt and beat until the dough comes together. Prepare the cookies as below.

Orage Jam!

Ingredients:

  • 2 oranges
  • 1 cup of sugar
  • 2 cups of water

Directions: Mix sugar and water in a pot and bring them to boil. Add the oranges chopped and change it to the lowest heat. Cook it for 1h45 until it gets thick. Let it cool and share into jars.

Quince Marmalade!

Ingredients:

  • 6 cups (packed) of quince, rinsed, grated (equals more or less 2 pounds of quince)
  • 4 1/2 cups of water
  • 4 cups of sugar
  • 1 tablespoon of lemon zest
  • 1 cinnamon stick

Directions: Add all the ingredients in a pan and bring to boil. Reduce heat and simmer until the quince is soft. Cook uncovered, stirring occasionally. Take off the cinnamon stick. I like to crush everything with a fork or if you like it really soft, use a immersion blender. Let it cool and share in jars.

This is for me my favorite present. I use my fluffy slippers almost all year, I probably just stop using them in August.

If you buy them in a neutral color or like the one pictured with a Christmas theme, it can be used for all genders.
